1 qt apple cider
2 cinnamon sticks
1 mandarin or half an orange
4 cloves
1-2 star anise
4 allspice berries
4 sm slices ginger
maple syrup / Honey
Gather spices and quarter the mandarin or orange.
Heat cider, spices, and citrus over medium heat until just simmering. Lower heat to just maintain a simmer. Let simmer for at least 40 minutes, up to an hour.
Remove spices and pour, adding additional cinnamon sticks and orange slices, or apple slices, for garnish.
Most cider recipes call for sugar as well. Try a small amount of maple syrup, coconut sugar, brown sugar (1 tsp/cup?).
